Kimchi Stew Recipe
Ingredients
- Kimchi: 2 cups
- Pork (pork belly or neck): 150g
- Tofu: 1/2 block
- Onion: 1
- Green chili pepper: 1 (adjust to your spice preference)
- Spring onion (scallion): 1 stalk
- Garlic: 2-3 cloves (minced)
- Red pepper flakes (Gochugaru): 1 tablespoon (adjust for spiciness)
- Red pepper paste (Gochujang): 1 tablespoon
- Soy sauce: 1 tablespoon
- Salt: A pinch
- Sesame oil: 1 tablespoon
- Sesame seeds: 1 tablespoon (lightly toasted)
- Water or broth: 4 cups
Instructions
1. Slice the pork into thin strips and marinate it with salt and soy sauce. Let it sit for about 10 minutes.
2. Cut the kimchi into bite-sized pieces.
3. Cut the tofu into 1cm thick slices, then cut those slices into half-moons. Slice the onion and green chili pepper thinly.
4. Finely chop the spring onion and garlic.
5. In a pot, add sesame oil and stir-fry the marinated pork until it's cooked.
6. Once the pork is cooked, add the chopped spring onion and garlic, then the kimchi. Stir-fry them together.
7. Add the red pepper flakes and red pepper paste. Continue to stir-fry until the kimchi becomes vibrant in color.
8. Pour in the water or broth and bring it to a boil.
9. Reduce the heat to medium and add the tofu, onion, and green chili pepper. Cover with a lid and let it simmer for about 10 minutes.
10. Taste and adjust the seasoning with salt if needed.
11. Finish by adding sesame oil and toasted sesame seeds.
12. Serve the kimchi stew hot with rice and side dishes.
